Best. Salmon. Ever.

My in-laws are snow-birds, they live in upstate NY on Lake George all Summer and then they travel south to gulf side of Florida for the Winter.  It's awesome.  On their drive each May and October going north or south they stop at our house for a week to see us, er I mean the boys.  Sue, Jeff's mom, is a really great cook.  She's crazy organized and stays on top of stuff... which is pretty much the exact opposite of me!  haha!  So, naturally I love having them here because she keeps us straight, fed, clean and happy.  She usually has meals for the week planned out, makes grocery trips when she gets here and gets everything ready for the week.  Last October when they were going South it was a little different story because I was on a restricted diet for my baby, Cade, who has food allergies.  He's breastfed and his belly didn't react well when I consumed dairy, soy or legumes so all of those things were a big no-no.  This only threw my MIL (mother-in-law) off for about 2 minutes.  She quickly started searching for things we could eat that suited everyone.  We really hit the salmon jackpot that night.  The normal recipe I used when preparing salmon had soy in it so I had to find a yummy recipe that didn't have any of the stuff Cade reacted to.  I honestly don't even remember how I searched it but I came across this blog/recipe and it sounded really good, so we decided to go for it.  OH. MY. GOSH.  It was delicious.  I've made this over and over and over again since October.  It never gets old.  Everyone I've made it for loves it.  A lot of people don't like salmon because it tends to have a fishy taste - but I promise you - promise - this recipe somehow removes/masks that fishy taste.  Here's the recipe (serves 2):

You need
2 Alaskan Salmon fillets, about 1/2 lb each (remove skin)
1/2 tsp paprika
1/4 tsp chili powder
1/4 tsp ground ancho chili powder
1/8 tsp ground cumin
1/2 tsp brown sugar
1/2 tsp salt
Maple syrup (I use whatever kind I have on hand for pancakes, etc)
***I haven't been able to find the ancho chili powder so I just double the regular chili powder. Also, I like a lot of spice so I normally double or triple the recipe to ensure I coat the salmon well**
Preheat oven to 425 and line a baking dish with foil.  Place salmon on foil.
Mix all spices in a small bowl and sprinkle over salmon, coating it well.
Bake salmon for 25 minutes or to desired doneness.  Once out of the oven, drizzle with maple syrup and serve!
